George Madosky

Fork | Philadelphia

FEBRUARY 2024

Even before attending  Johnson & Wales University in 2014, George Madosky has always wanted to learn. As a child watching his parents cook and prepare meals, Madosky was inspired. He went to culinary school, externed at the Loews Hotel in Philadelphia, and returned post-grad to help open their new restaurant, Bank & Bourbon. He quickly fell in love with the industry and its fast-paced kitchen environment. In late 2016, Madosky staged at Fork. He was drawn to the timeless character of the restaurant, the homey feel, and his sense that there was a real opportunity to grow. Under Chef John Patterson, Madosky worked his way from line cook to head chef, running the kitchen since 2020.

Madosky began to develop and foster his relationship with Fork’s owner—and his mentor—Ellen Yin, who sent him to stage at Sofreh in Brooklyn, which empowered him in the kitchen and encouraged him to engage more with the local community. He took this as a call to action. Over the past three years, he has continued to promote a culture of education and mentorship, while also serving on the Careers Through Culinary Arts Program (C-CAP) Chef Advisory Board. A strong and passionate advocate for the non-profit, Madosky has worked with students and employed C-CAP alums in his kitchen. At Fork, Madosky has brought his own personality to the restaurant, seamlessly incorporating flavors inspired by his Mediterranean heritage into the menu, and has put an emphasis on training, communication, and community.
