He expanded the raw bar menu, offering cockles and mussels from New Zealand, and sea urchins from the North Shore in addition to the extensive variety of local shellfish and seafood. The menu changes daily, driven by market availability of the highest quality seafood. It offers a variety of ceviche, ranging from salmon and chive ceviche served with black bean and avocado salsa to citrus striped bass presented with watercress salad. ComplSKIPJACK’S was named after a type of tuna, indigenous to the Pacific, that is known for its tenacity and strength. Jeff Senior chose the name to reflect his vision of a restaurant known for aggressively pursuing the highest quality product and presenting it in the most economic fashion. The newest SKIPJACK’S is sure to cement the restaurant’s reputation as an often imitated leader in the Boston restaurant market.menting the food is a selection of dozens of wines by the glass. The international wine list changes frequently as SKIPJACK’S procures limited productions. Emphasizing French and American vintages, SKIPJACK’S is able to provide many types of wine that are unavailable elsewhere in the city.

In the summer of 1999, Jeff Senior turned his attention to Newton’s Caffe Lampara. He decided to close Caffe Lampara, renovate it and turn it into the area’s third SKIPJACK’S. The nationally recognized Chicago design firm of AuMiller Youngquist completed its $300,000 renovation in September of 1999. The new dining room evokes the feel of a 1930’s elegant cruise ship with arches and curvy spaces reminiscent of waves. A striking parquet floor is a perfect foil for beautifully upholstered chairs and banquettes. Two glassed-in private dining areas are available, one an intimate space for twelve and a larger room for 45. The newest addition to the SKIPJACK’S family is its most sophisticated member. The menu offered in Newton mirrors that of Boston and Brookline, offering the largest variety of fresh fish in the area.
