Zucchini Imperial

- 3 med. zucchini, sliced (4-5 cups)
- 2 cups boiling water
- 2 eggs
- 1 cup mayonnaise
- 1 med. onion, chopped
- 1/2 med. green pepper chopped
- 1 cup grated Parmesan cheese
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 3 tbsp.butter or margarine
- 1/3 to 1/2 cup day-old bread crumbs
Cook zucchini in water until just tender. In large bowl beat eggs. Add mayonnaise,
onion, green pepper, cheese, salt, and pepper. Fold in drained zucchini. Turn
into greased 11/2 quart baking dish. Dot with 1 Tablespoon butter. Melt remaining
butter and combine with bread crumbs. Sprinkle on top of zucchini mixture. Bake
at 350 for 30-35 minutes. Makes 6 servings.
