Habanero Mango Salsa

- 2 Mangoes skinned and finely chopped (plant the seed , you never know)
- 1/2 cup Cilantro minced
- the juice of 1 lemon
- 1 finely diced Habanero Pepper seeds removed, pureeing it works well too
- 1/2 Finely diced Red Pepper (for color)
- sea salt & pepper to taste
mix all and serve
good with plantain chips and fish also good sauteed with chicken medallions and white wine or rum
