Chicken Rolls

  • 4 chicken breasts boneless/skinless
  • 4 large slices of Prociutto ham
  • 2 Shiitake Mushrooms cut in slices
  • 1 small red bell pepper cut in slices
  • 1 cup maytag blue cheese cut in slices or crumbled
  • 4 puff pastry sheets
  • 1 egg beaten

preheat oven to 350 degrees

Butterfly chicken breasts,place between plastic wrap and pound until thin but dont create holes.

Salt and pepper both sides of chicken,with chicken laying out place Prociutto covering chicken, at one end place 1/4 of the shiitake and bell pepper,add 1/4 cup of blue cheese.Roll up chicken tucking in the edges of the chicken.Place on the puff pastry sheet,fold pastry over and use beaten egg to seal edges of pastry. Coat top of pastry with egg wash,place on oiled parchment paper and on a cookie sheet, place in oven and cook for 25 minutes.

After removing let sit a few minutes. Serve with fresh asparagus.

Makes 4 servings.
