Spicy leftover pork casserole

  • 1 lb leftover pork roast, tenderloin, chops etc. cut into 1/2" chunks
  • 1 can white hominy, drained
  • 1 can chopped green chiles
  • 1 bunch green onions chopped
  • 6 fresh jalepenos, seeded and diced
  • 1/2 bunch fresh cilantro, chopped
  • 1 t oregano
  • 1 t ground cumin
  • 1 8 oz pkg shredded mexican 4 cheese mix
  • 1 package low sodium chicken gravy mix
  • 2 c water

Put first 9 ingredients into a large mixing bowl. Mix the water and the gravy mix and cook till thick. Add gravy to mix. Pour into greased casserole. Bake at 350 degrees F for about an hour. Let it sit for a while before serving to thicken. Serve with corn tortillas or taco shells. Can also be used as filling for enchiladas or tacos or tamales. It's nice to put a little shredded lettuce, tomato chunks and sour cream on the side with some salsa.
