Cream Corn/Potato Casserole
Ingredients:
Brown hamburger and onions - add salt & pepper, drain well.
Place hamburger and onions in bottom of 2 quart casserole dish.
Layer the shredded carrots on top of hamburger & onion mixture.
Next, layer the 1 can cream corn
Drop the mashed potatoes carefully in large spoonfuls on top of the creamed corn and spread evenly with spatula.
(If using leftover mashed potatoes, it is much easier to heat them first before spreading on top
of casserole).
Brush the beaten egg over the potatoes with pastry brush (this helps the potatoes brown better).
Bake @ 350 degrees for 45 - 60 minutes.
