Your Favorite Pasta with Beans, Veggies and Pesto!

Ingredients:

1. Cook 1 lb pasta (any shape that you like) in boiling salted water until al dente. 2. Meanwhile, heat 2 tbsp olive oil in skillet. Add 1 minced garlic clove and cook only until translucent. 3. Add vegetable of your choice (1 bunche asparagus, trimmed, and cut into 2 inch pieces OR 2 broccoli crowns trimmed and cut into bite-sized pieces OR any combination that you like).
Stir-fry on high heat until bright green but still firm. 4. Add one can rinsed and drained small beans
(of your choice, try red beans or white beans).
Cook on high until heated through.
5. Drain the pasta. Add 2 or 3 tbsp of any prepared pesto that you like.
Spoon bean-vegetable mixture on top.
6. Garnish with halved, ripe Israeli cherry tomatoes or
Mexican grape tomatoes.
7. Serve with your favorite grated cheese.
