Chicken and Mushrooms
Ingredients:
Dip chicken in crumbs and the eggs that have been beaten, then in crumbs again.
Heat oil and fry chicken until lightly browned.
Transfer to casserole dish.
Saute mushrooms for a couple of minutes then top chicken with the mushrooms.
Season with salt and pepper.
Sprinkle chicken with cheese and pour chicken broth on all the pieces.
Cover and bake for 30 minutes, then uncover for the last 5 minutes.
