Chicken Greek
Poach chicken breast in a lemon, butter, oregano bath at 350-for 40 to 45 min.let cool, take out the bones and the skin.
Slice onions, bell peppers, roasted red peppers, two pepperoncine.
Place the chicken on cutting board and slice into approx. one inch slices.
Depending on the size of your chicken breast you should have
5-6pieces.
Place on a serving dish in a horse shoe shape, place sliced
onions, then mushrooms, then some crumpled feta cheese, then your three
kinds of peppers, some sliced kalamata olives, and lastly some sun dried
tomatoes(the ones soaked in olive oil).
Add a little juice from the s.d. tomatoes.
Now cover your dish and place in micro wave oven for 2-4min.
depending on the wattage of your oven.
You'll feel like you're in sunny Greece.
