Easy Italian Chicken Breasts
1. Pound 4 boneless, skinless chicken breasts to about 1/4"
2. Dip breasts in seasoned flour(seasoned with salt + pepper)
3. Beat 2 eggs with 3 tabs. water added(beat with a fork)
4. Dip floured chicken breasts in egg mixture
5. Then dip chicken breasts in seasoned italian bread crumbs(buy or season bread crumbs yourself) add 2 tabs. parmesan or roman cheese to bread crumbs
6. Melt 1 stick unsalted butter in saute pan, add 1 clove fresh garlic(smashed) + saute breasts until golden on both sides (about 8 minutes per side)
7. Remove to platter + cover with foil. put in warming oven(150deg.)
8. Add 2 more tabs. butter to saute pan. saute for 2 minutes: 1 sliced leek(white tender part only), 1 fresh tomato chopped, a couple fresh basil leaves(chopped), 1/2 tsp. sugar, salt(to taste), + freshly ground black pepper.
9. Take platter of chicken out of oven. pour leek + tomato mixture over chicken
10. Serve with a seasoned rice and a crisp green salad
