Quick Spinach Delight

Ingredients:

• 1 tablespoon olive oil
• 10oz.package spinach
• 1/4 cup of chopped onion, or shallots
• 1/2 cup of low/no fat cream cheese
• 1/2 cup of lowfat milk
• 1/2 cup grated parmasean cheese
• salt and pepper

Preheat oven to 350 degrees. In a skillet heat oil saute onions or shallots until translucent. Add spinach and saute until just wilted. In a separate sauce pot mix milk and cream cheese until creamy season with with salt and pepper. Mix cheese mixture and spinach together and turn into a glass baking dish. Sprinkle with parmasean cheese and bake for 12-15 minutes until cheese is soft and slightly golden. Do not overly brown. Serve hot. Can be reheated and or frozen.
