No Fail Fresh Tomato Soup(hot or cold)
Ingredients:
saute onion in olive oil until soft
add tomatoes
cover and cook until tomatoes are soft(about 15 minutes)
blend mixture in a blender for 1-2 minutes.so that it is not watery
empty mixture into a bowl,add lemon juice, brown sugar,salt and fresh basil
if serving cold, place in refrigerator for several hours and serve with
croutons. remove basil before serving
if serving hot, heat gently but don't boil
This ia a great way to use tomatoes that are too ripe to serve!
