“Anyone who thinks that they are too small to make a difference
has never been bit by a mosquito.” This is Andy Husbands’
motto as one of Boston’s most influential young chefs in the
fight against hunger and poverty. In fact, Husbands was named Chef/Restaurateur
of the Year, 2004, by Share Our Strength, an organization with which
he has worked very closely for the past 8 years. With his opening
of Tremont 647, followed by Sister Sorel and Rouge, in
Boston’s South End, the area has been dubbed “Andy Land”
by the press; thanks in part to Husbands, the once forlorn Boston
neighborhood has become a hotbed of prime dining. For nearly 10
years Tremont 647 has carried out its mission to provide high quality
food and hospitality in a professional, fun and funky environment.
The 70-seat restaurant serves up boldly flavored American cuisine,
with inventive global influences. A protégé of Chris
Schlesinger, Boston’s legendary grill master and cookbook
author, Andy frequently participates in BBQ competitions around
the country and has received numerous awards for his mouthwatering,
sticky-finger barbecue.
Andy's Award Winning BBQ Sauce, a.k.a
UFO Social Club Barbecue Sauce

Yield: 5 Cups
Ingredients:
Basic Barbecue Rub:
- 2 Tablespoons granulated sugar
- 2 Tablespoons brown sugar
- 2 Tablespoons ground cumin
- 2 Tablespoons chili powder
- 2 Tablespoons salt
- 2 Tablespoons freshly ground black pepper
- 1 Tablespoon cayenne
- 4 Tablespoons paprika
UFO Social Club Barbecue Sauce:
- 2 Tablespoons vegetable oil
- 1 large yellow onion, chopped
- 1 (14.5-ounce) can tomato puree
- 1 (14.5-ounce) can tomatoes, with juice
- ½ cup white vinegar
- 2 packed Tablespoons dark brown sugar
- 2 Tablespoons granulated sugar
- 1 Tablespoon salt
- 1 Tablespoon freshly cracked black pepper
- 1 Tablespoon paprika
- 1 Tablespoon chili powder
- 2 Tablespoons molasses
- ¼ cup Basic Barbecue Rub
- ½ cup orange juice
- 4 Tablespoons yellow mustard
- 1 (12-ounce) bottle dark beer
Method:
For Basic Barbecue Rub:
Mix together all the ingredients thoroughly. The rub will keep for
several months stored in a cool, dark place in an airtight container.
Yields 1 cup.
For UFO Social Club Barbecue Sauce
Heat oil in large, heavy-bottomed saucepan over medium-high heat.
Add the onion and sauté, stirring frequently, until golden
brown, about 10 minutes. Add the remaining ingredients and bring
to a boil. Reduce heat to very low and simmer gently for 2 hours.
Stir the sauce occasionally, scraping the bottom of the pot to prevent
scorching. Transfer the sauce to a food processor or blender and
puree in 2 batches. Transfer to a clean glass jar and store for
up to 7 to 10 days in the refrigerator.
