Chef Caitlin Mateo of Square 1682 at Hotel Palomar - Biography
As a full-time gymnast, Caitlin Mateo mastered discipline long before she entered the kitchen. And the drive and work ethic she learned on the mats served her well at her first culinary post under Chef Marianne Cuneo-Powell at The Little Café in Voorhees, New Jersey. Cuneo-Powell served as Mateo’s first mentor, forming the base of her budding culinary career.
Mateo’s next step was Philadelphia’s The Restaurant School. After graduation, she went on to work for Chef Marcie Turney as a sous chef, and then seized the opportunity to join Square 1682 at Kimpton’s Hotel Palomar. Mateo continues to grow under the direction of Executive Chef Guillermo Tellez, whom she counts as her most valuable mentor and a major influence in her culinary style. Rising from sous chef to chef de cuisine, Mateo now oversees day-to-day operations and menu development with global offerings and a dedication to cooking healthy, delicious food.
