Pastry Chef Christina Mercado of Finale - Biography
Christina Mercado originally trained in the savory side of the kitchen, earning degrees in culinary arts from Johnson & Wales University, as well as her MBA in hospitality. She also spent time traveling to Singapore, Thailand, and Peru to pursue her passions for international cuisines. After graduating, Mercado found herself in the pastry kitchen at The Spiced Pear in Newport, Rhode Island. Soon after Mercado started her own cake and confectionary business, Deliciae, which she still operates part-time through referrals and through which she has placed twice in the Connecticut Cake Competitions. In summer 2012, she joined the team at Finale Desserterie & Bakery as kitchen manager and chef.
