In December StarChefs.com Managing Editor, Will Blunt, had the opportunity to interview Chef Mathias Dahlgren at his eponymous restaurant, Mathias Dahlgren, in Stockholm, Sweden. Dahlgren is best known internationally as the first Swedish chef to win the Bocuse d’Or award in 1997. In Stockholm, he’s known for naturalistic cuisine that draws from local ingredients and global perspectives.
