Prosciutto. Soppressata. Bresaola. How we love thee. Thinly-sliced, melt-in-your-mouth goodness. Every chef knows that with charcuterie, the cut, and presentation of the final product are just as important as the recipe itself: thickness and consistency are key. For the serious salumist, when it comes to slicing and serving goods, very few meat slicers make the cut.
In 1888, Wilhelm Von Berkel, a butcher and inventor in Rotterdam, Holland, developed and patented the first automatic meat slicer, what would eventually become the “Ferrari of slicers", paving the way for precision performance. He created an innovative moving table that brought the meat to the revolving concave blade. This invention was the first of its kind and is what led Von Berkel to start the Berkel Company in Holland, 10 years after his initial invention.
In 1898, Berkel’s Heritage 330M manual slicer revolutionized the way the world sliced meats and cheeses. Its breakthrough patented concave knife edge reduced heat and friction and allowed high speed, precise, and repeatable slicing. Its simple manual flywheel operation required no motor while still efficiently multi-tasking (revolving the knife blade, moving the meat/cheese product back and forth into the knife, and automatically indexing food product towards the knife for consistent slice thickness).
Now, 120 years after Berkel’s original invention—an industry game-changer that generated the global category of motor-driven meat slicers—Berkel has recreated the machine that started it all: its Heritage slicer, now available in classic Berkel red for front of the house, theatre slicing.
Installed in any restaurant space, it connects you to history, and pays homage to an exquisite technology that changed the way slicing works. Just remember as you slice for your guests to thank the 19th century Dutch butcher for one simple—and beautiful—idea.
