Wild Boar Chop in a Cinnamon Apple Buerre Blanc

- 1
rack wild boar chops, frenched (may be substituted with pork
chops)
- Cinnamon
Apple Buerre Blanc (see below)
- Salt
and freshly ground black pepper to taste
Cut
rack into 4 double chops. Season with salt and pepper. Cook on
the grill (turning often) about 12-15 minutes or until medium.
Place on a plate and serve with Cinnamon Apple Buerre Blanc.
Cinnamon Apple Buerre Blanc
Yield: 1 servings
- ¼
cup lime juice
- ½
cup apple juice
- 2
Tablespoons rice vinegar
- ¼
cup shallots
- 1
Tablespoon fresh garlic, finely chopped
- 1
teaspoon cinnamon
- 2
Tablespoons maple syrup
- 2
Tablespoons lime juice
- ½
pound butter, cut into small pieces
- Salt
and pepper to taste
Over
medium heat reduce first five ingredients until a thick glaze
forms. Remove from heat. Stir in cinnamon, maple syrup and lime
juice. With a whisk, over very low heat, beat in butter until
melted. Remove from heat and place in a warm area.
