Armstrong, executive chef and owner of Restaurant Eve in Alexandria,
VA, offers a menu highlighting some of Ireland’s beloved staples.

Black
pudding takes a classy turn when paired with sautéed foie gras
and caramelized apples, while corned beef and cabbage with boiled
potatoes are revamped with butter, aromatics and a creamy béchamel
sauce. Chef Armstrong’s novel approach to these more traditional
dishes may be due to his diverse culinary upbringing. Though raised
in Ireland, Armstrong was able to expand his palate traveling through
Europe with his family and summering in France from the age of 7.
Stateside, Armstrong’s cooking has been receiving accolades
for over a decade, and with the success of Restaurant Eve, named for
his first child and run with wife Meshelle, he seems to have found
a home creating dishes that reflect upon his experience abroad. |
