Boston's first ever champion of tapas, Marc Orfaly of Pigalle,
will have the chance to defend his title at the second annual
James Beard Foundation Greens Tapas Challenge on February 16,
2003 at the James Beard House. Barbara Lynch of No. 9 Park
and Jeremy Sewall of Great Bay Restaurant will compete against
Marc Orfaly for the title by preparing three tapas courses, each
to pair with a different wine variety selected by the judges.
Last year's event pitted Marc Orfaly against Ana Sortun of Oleana
and Andy Husbands of Tremont 647. Dishes featured Kobe beef,
duck confit, short ribs, and competition ended in a family style
service of rich desserts such as Tremont 647's banana cream pie.
