Village's blood orange mimosa

This one's from Village's chef, Steve Lyle.

• One part fresh squeezed blood orange juice
  
• Two parts Champagne
  
• Garnish, pink sugar & mint
  

Rim the glass with sugar that has been dyed pink
and garnish with a sprig of mint.
