Yield: 4 Servings
Ingredients: 3 Tablespoons olive oil 1 package vegetarian Italian \"sausage,\" sliced into 1/2-inch pieces (try Tofurky brand) 1 sweet yellow onion (Vidalia or Walla Walla), chopped 1 red bell pepper, diced 2 cups oyster mushrooms 2 garlic cloves, chopped 1/2 pound green beans, cut into 1-inch pieces 1 (14.5-ounce) can petite-diced tomatoes, drained 2 ½ cups vegetable stock 2 Tablespoons chopped pimento ¾ teaspoon sea salt ¼ teaspoon ground oregano ¼ teaspoon ground saffron ½ teaspoon hot red pepper flakes ¼ teaspoon ground fennel seed 1 cup long-grain rice 1 (14-ounce) can artichoke hearts, drained and quartered
If vegetarian "sausage" is unavailable, add a 16-ounce can of chickpeas when you add the tomatoes.
Method: In a large pot, heat 2 Tablespoons of the olive oil. Add the "sausage" and cook over medium heat for 5 minutes, or until browned. Remove from pot with a slotted spoon and set aside.
Heat the remaining oil in the same pot. Add the onion, bell pepper, oyster mushrooms, and garlic. Sauté for 5 minutes. Add the rest of the ingredients except the artichoke hearts. Cover and simmer for 30 minutes. Stir in the artichoke hearts and the reserved sausage. Cover and simmer 10 minutes longer. Serve family style on a large platter.
