1. Did you know that cooking the stuffing with the drippings from your
roasted turkey in a separate ovenproof casserole can help save you from
the morning after "yukies" you sometimes get from eating stuffing that's
been cooked inside the cavity of your holiday turkey.
2. I also
love to cook all my Thanksgiving birds in an ovenproof cooking bag.
This way I can put all the flavors in to the bag and the bird is basted
while it cooks automatically giving you a moist and tender bird, perfectly
seasoned, incredibly fragrant and delicious every time.
3. By
using the bag to cook in all the liquid remains with all the flavors
infused ready to skim and use to make delectable gravy. All you need
to do is to remove the liquid, skim the off the fat and thicken with
flour and a little cayenne pepper. This is better than using the drippings
from your traditional roasting pan because the fats do not stick to
the pan and taste burnt. As well as you get to keep all the cooking
liquids since they do not evaporate during roasting.
