INGREDIENTS
Mint Pineapple Gremolata:
20 grams Fresh Origins Mint Pineapple Tops™
20 grams parsley
20 grams chives
2 garlic cloves
15 grams lemon juice
Zest of 1 lemon
5 grams serrano chile
125 grams olive oil
10 grams salt
To Assemble and Serve:
One 2-pound hanger steak
Olive oil
Thyme
Garlic
Fresh Origins Mint Pineapple Tops™
METHOD
For the Mint Pineapple Gremolata:
In a food processor, combine all ingredients. Blitz until finely chopped. Set aside.
To Assemble and Serve:
Place steak in a shallow baking dish. Season generously with olive oil, thyme, and garlic. Cover and refrigerate 1-2 hours. Prepare and heat grill. Remove steak from marinade and grill to medium rare, or until internal temperature reaches 135°F. Let rest. Transfer steak to the center of a serving platter. Top with Mint Pineapple Gremolata. Finish with Fresh Origins Mint Pineapple Tops™.
