Announcing Sherry Vinegar Recipe Contest WinnerS

The secret behind Sherry Vinegar’s unique and extraordinary quality is, without a doubt, its origin. Sherry Vinegar can only be made in one place: the Jerez Region in southern Spain, where Sherry wines are produced. We challenged our community of chefs to showcase Sherry Vinegar from Spain in creative recipes. Check out the winners here!


 

StarChefs partnered with Foods from Spain and Sherry Vinegar from Spain to give one lucky chef an all-expenses paid trip to Jerez, Spain this October. Congratulations to Chef Andrew Manning of Longoven on his winning dish: Tuna Tartare with Mountain Rose Apple, Sherry Vinegar Granita, Kombu Oil, Winter Radishes, and Shiso.

As Manning describes, “The fruity, vegetal aspects of the apple juice and the umami notes of the kombu oil bring together the richness of the raw, fatty tuna. The components are further brightened by the cold Sherry Vinegar from Spain granita. The final result is a savory, sweet, and refreshing dish of tuna, apple, Sherry vinegar, and a peppery, bitter radish salad.”
