Announcing Pecorino Romano PDO Recipe Contest Winners
Pecorino Romano PDO has been produced since the times of the Roman Empire. We challenged our community to come up with original recipes featuring the cheese and they did not disappoint. Check out the winners here!
Congratulations to Chef Carlo Lamagna of Magna Kusina on his winning dish: beef bulalo with wagyu kilawin, potato foam, Pecorino Romano PDO, fried garlic, and chives.
As Lamagna explains: “In Filipino cuisine, cheese is usually limited to desserts or as a snack with bread. Throughout my career, I have cooked many different cuisines, and one of my personal favorites was Italian with its intricate pastas, rich braises, and deep culinary history. Over the years, I have managed to incorporate my years of world cooking experience into Filipino cuisine. In this particular recipe, I use the Pecorino Romano PDO as a heavy source of umami, a replacement for fish or soy sauce.”
