A St. Louis, M.O. native, Molly Greene graduated from the University of Missouri in 2014 with a degree in finance and hospitality management. Although she intended to work on the operations side, an internship at the St. Louis Four Seasons Hotel’s restaurant piqued her interest into the world of fine dining. After graduation, she joined the team permanently as a server and absorbed everything she could about the restaurant’s wine list, which quickly developed into a growing obsession. She dedicated herself to learning about all things wine, working the morning shift and returning to the hotel at night to attend wine classes. In 2018, Greene passed her certification exams and made the decision to move to San Francisco. She briefly worked at Rich Table as sommelier before joining the opening team at Angler.
In 2021, Greene moved to sister restaurant Saison, where earlier this year she was named beverage director. She has big plans and ideas for the wine program, leading staff education and hosting classes for her team almost every day. She wants both the front and back of house to forge a connection with the pairings, encouraging the staff to sample the pairing themselves. Alongside chef de cuisine Richard Lee, Greene is determined to leave her mark at Saison, working behind the scenes to foster a positive work environment that allows her team to thrive, while also ensuring an unforgettable experience for diners, and making pairings more approachable and educational.
