Born and raised in Hilo on Hawaii’s Big Island, Sheldon Simeon’s first culinary adventure was an internship at Walt Disney World. After leaving Disney (where he met his future wife), graduating from Maui Culinary Academy in 2002, and winning second place at a local Maui culinary competition, Simeon took a job at Aloha Mixed Plate, an eclectic lunch plate restaurant in Maui. Working his way up the ladder, Simeon’s bosses named him head chef at Aloha’s new sister restaurant Star Noodle, where he helped craft pork buns, ramen, udon, and yakitori—all with local twists.

That mix of innovation and adherence to tradition on the Star Noodle menu led to two James Beard Award nominations in 2011: “Rising Star Chef of the Year” and “Best New Restaurant,” as well as Food & Wine's "People's Choice Best New Chef" and StarChefs's Hawaii Rising Star Concept Chef award in 2012. Sheldon competed in both the 10th and 14th seasons of Bravo’s “Top Chef,” winning Fan Favorite both times. In 2016, he opened his first solo restaurant, Tin Roof, in Kahului, Maui, where he serves local dishes in take-out bowls. In fall 2018, Sheldon opened his second solo project, Lineage, also on Maui. At Lineage, his first full service concept, Simeon delights guests with traditional local Hawaiian fare. In 2019, Lineage was a James Beard Award semifinalist for “Best New Restaurant.”
