Cheeseburger Taquitos

INGREDIENTS
Taquitos:
Yield: 12 taquitos
1 pound Impossible™ beef made from plants
1½ cups shredded cheddar cheese
½ cup caramelized onions
⅓ cup ketchup
½ cup yellow mustard
½ cup diced dill pickles
Twelve 6-inch corn tortillas
2 tablespoons all-purpose flour
Special Sauce:
Yield: 2½ cups
1 cup mayonnaise
½ cup ketchup
½ cup yellow mustard
½ cup sweet relish
1 tablespoon granulated sugar
½ white onion, grated
To Assemble and Serve:
Yield: 1 serving
Oil for frying
⅓ cup cheddar cheese
Shredded lettuce
Ketchup
Mustard
Sliced red onion
METHOD
For the Taquitos:
In a mixing bowl, combine beef, cheese, onions, ketchup, mustard, and pickles. Set aside. In a sauté pan over medium heat, warm tortillas until soft and pliable. Transfer to a plate and cover with a tea towel. In a small bowl, combine flour and 2 tablespoons water. Set aside. Transfer 1 tortilla to a work surface. Place 3 ounces Impossible™ meat mixture on the lower third of the tortilla. Roll into a tight log, using the flour-water mixture to seal the edges. Repeat with remaining tortillas. Reserve.
For the Special Sauce:
In a mixing bowl, combine all ingredients. Transfer to an airtight container and refrigerate.
To Assemble and Serve:
Heat broiler to high. In a fryer, heat oil to 350°F. Fry 3 Taquitos 3 minutes, or until golden and crispy. Transfer to a sheet tray and top with cheese. Bake in oven until cheese has melted. Transfer to a serving plate. Top with shredded lettuce, then drizzle with ketchup, mustard, and Special Sauce. Finish with red onion.
