Pork and Beef TOSTADAS
Carne de Casamiento, Pickled Beets, Refried Beans, Salsa, Cotjia, Guacamole, Cilantro

INGREDIENTS
Pickled Beets:
5 pounds red beets
1 quart white vinegar
¼ cup sugar
1 tablespoon salt
2 bay leaves
1 bunch thyme
Refried Beans:
5 pounds pinto beans, soaked overnight
5 pounds black beans, soaked overnight
1 pound jalapeños
1 onion
10 cloves garlic
2 tablespoons ground cumin
Salt
Carne de Casamiento:
3 pounds beef shank
3 pounds pork butt
1 onion
1 bay leaf
Salt
Ground black pepper
¼ cup olives
¼ cup roasted red peppers
¼ cup raisins
¼ cup pickles
¼ cup olive brine
To Assemble and Serve:
Yield: 1 serving
2 tortillas
Salsa
Cotija cheese or queso de bola
Guacamole
Chopped cilantro
METHOD
For the Pickled Beets:
Heat oven to 350°F. Place beets in a large hotel pan and cover with foil. Roast 1 hour, or until the beets are fork tender. Let cool, then peel and julienne. Set aside. In a large pot over medium heat, add vinegar, sugar, salt, bay leaves, thyme, and 3 quarts water. Cook until sugar has dissolved. Add beets and bring mixture to a boil. Remove from heat and transfer to a nonreactive container. Let sit overnight.
For the Refried Beans:
In a large pot over medium-high heat, add all ingredients and enough water to submerge. Bring mixture to a boil. Cook until the beans are tender. Taste and adjust seasoning with salt. Let cool, then transfer to a Vitamix blender and purée until smooth. Transfer to an airtight container and reserve.
For the Carne de Casamiento:
In a pressure cooker, add beef, pork, onion, bay leaf, salt, and pepper. Cook 45 minutes. Let cool, then transfer to a food processor. Pulse until the meat has been shredded into bite-sized pieces. Transfer to a mixing bowl and stir in olives, peppers, raisins, and pickles. Taste and adjust seasoning with olive brine and salt. Reserve.
To Assemble and Serve:
Place tortillas onto a serving plate. Spread 1 tablespoon Refried Beans on each tortilla. Top with Pickled Beets, followed by the desired amount of Carne de Casamiento, salsa, cheese, guacamole, and cilantro.
