Easy Martini
Gin, Salted White Tea, Italicus, Cocchi Americano, Yellow Chartreuse, Fino Sherry

INGREDIENTS
Salted White Tea:
8 grams white tea leaves
3.38 grams kosher salt
To Assemble and Serve:
½ ounce dry gin
½ ounce Italicus
¼ ounce Cocchi Americano Bianco
¼ ounce Yellow Chartreuse
1½ ounces fino Sherry
Lemon peel
METHOD
For the Salted White Tea:
In a nonreactive container, combine tea leaves and 1 kilogram hot water. Let steep 3 minutes. Strain and discard tea leaves. Stir in salt until fully dissolved. Reserve.
To Assemble and Serve:
In a nonreactive container, stir to combine all ingredients and 1 ounce Salted White Tea. Transfer to freezer. Do not hold below 18°F. For pickup, pour 2 ounces batched cocktail into a martini glass. Express lemon peel over top. Serve with 2 ounces batched cocktail in a sidecar carafe over crushed ice.
