Sea Salt-Vanilla Soft Serve and Chocolate-Kelp Soft Serve

INGREDIENTS

Sea Salt-Vanilla Soft Serve:
Yield: 16 quarts
11.44 kilograms whole milk
1.44 kilograms heavy cream
10 whole vanilla beans
1.04 kilograms milk powder
1.6 kilograms granulated sugar
8 grams guar gum
8 grams xanthan gum
35 grams sea salt
320 grams glucose

Chocolate-Sugar Kelp Soft Serve:
11.44 kilograms whole milk
1.44 kilograms heavy cream
816 grams sugar kelp
Vanilla extract
180 grams dark chocolate, melted
1.04 kilograms milk powder
1.6 kilograms granulated sugar
320 grams glucose
8 grams guar gum
8 grams xanthan gum
35 grams sea salt
180 grams cocoa powder

METHOD

For the Sea Salt-Vanilla Soft Serve:
In a saucepan over medium-high heat, bring milk, cream, and vanilla beans to a boil. Once mixture reaches 200°F, remove from heat and using a slotted spoon, discard vanilla beans. Set aside. In a mixing bowl, whisk together remaining ingredients. Pour into the pan with the warmed milk. Using an immersion blender, blend mixture until smooth and well combined. Set over an ice bath and let cool. Once cooled, transfer base to an airtight container and refrigerate overnight. The next day, strain and process in an ice cream machine according to the manufacturer’s instructions.

For the Chocolate-Sugar Kelp Soft Serve:
In a saucepan over medium-high heat, bring milk, cream, sugar kelp, and a dash of vanilla extract to a boil. Once mixture reaches 200°F, remove from heat and let steep 20 minutes. Using a slotted spoon, remove and discard kelp. Stir in melted chocolate. Using an immersion blender, blend mixture until well combined. Set aside. In a mixing bowl, whisk together remaining ingredients. Pour into the pan with the warmed chocolate mixture. Using an immersion blender, blend until smooth and well combined. Set over an ice bath and let cool. Once cooled, transfer base to an airtight container and refrigerate overnight. The next day, strain and process in an ice cream machine according to the manufacturer’s instructions.

To Assemble and Serve:
Pipe Sea Salt-Vanilla Soft Serve and Chocolate-Sugar Kelp Soft Serve into a serving bowl. Serve.
