Yield: One 14-inch pizza
INGREDIENTS:
Dough:
Olive oil
415 grams pizza dough, chilled
All-purpose flour
To Assemble and Serve:
3 ounces marinara sauce
2 cups shredded mozzarella
1 cup smoked ham, cut into small cubes
½ cup pineapple, cut into small cubes
3 tablespoons pickled peppers
1 tablespoon sambal
Olive oil
Salt
All-purpose flour
Freshly grated parmesan
METHOD:
For the Dough:
Grease a nonreactive container with olive oil. Place pizza dough inside the container. Let rest 1 to 2 hours to let the dough loosen up. With lightly floured hands, transfer the dough to a floured, medium-sized bowl. Toss to coat with flour, then place the dough on a well-floured work surface. Using your palm, press the center to flatten. Stretch the dough by placing your left palm in the center while your right hand makes a clockwise motion around the edge. Once the dough is about 8 inches in diameter, place dough on your floured knuckles. Gently spread your two hands apart to evenly stretch until the dough is approximately 12 inches and nearly transparent. Set on a floured pizza peel.
To Assemble and Serve:
Heat oven with a pizza stone to 500°F. In the middle of the Dough, ladle marinara sauce. Using the back of the ladle, spread the sauce to form an even circle. Evenly top with mozzarella, ham, pineapple, and pickled peppers. Spoon sambal over the entire pizza. Drizzle with olive oil, then season the crust with salt. On the pizza peel, give the pizza a shimmy to loosen enough that it will slide off easily. If the dough is too sticky, gently lift up a side and add a pinch of flour underneath. Shimmy again and repeat until loose. Place pizza onto the pizza stone. Bake 4 minutes. Using the pizza peel, turn the pizza 90-degrees clockwise. Bake 2 minutes, turn 90-degrees clockwise, then back another 2 minutes or until slightly past golden brown on the surface and dark and blistered on the bottom. Pull pizza from the oven and place on a round pizza tray. Cut into 6 pieces and garnish with parmesan.
