Weird Avocado
Everything Seasoned Avocado, Mother Sauce Aïoli, Pickled Jicama, Alfalfa Sprouts

INGREDIENTS
ATP Mother Sauce:
10 pounds Fresno chiles, tops removed
4 tablespoons granulated sugar
6 tablespoons kosher salt
1 gallon distilled white vinegar
1 cup honey
Pickled Jicama:
2 cups rice vinegar
8 teaspoons granulated sugar
¼ cup pickling spice
3 cloves garlic, smashed
3 bay leaves
2 teaspoons red pepper flakes
1 jicama, peeled and thinly sliced
Everything Seasoning:
4 tablespoons poppy seeds
2 tablespoons white sesame seeds
2 tablespoons black sesame seeds
2⅔ tablespoons dried minced garlic
2⅔ tablespoons dried minced onion
4 teaspoons flaky sea salt
4 teaspoons ground Aleppo pepper
Mother Sauce Aïoli:
1 cup mayonnaise
½ lemon, juiced
To Assemble and Serve:
1 medium avocado, peeled and cut into 8 wedges
Alfalfa sprouts
METHOD
For the ATP Mother Sauce:
Heat oven to 550°F. Place chiles on a sheet tray and roast 20 minutes, or until chiles are charred. Transfer chiles to a food processor and pulse until roughly chopped. Transfer to a nonreactive container with sugar and salt. Mix to combine. Cover and let ferment 21 days at room temperature. Once fermented, transfer chiles to a Vitamix blender with vinegar and honey. Blend until smooth, adding water if necessary to thin out sauce. Set aside.
For the Mother Sauce Aïoli:
In a bowl, combine mayonnaise, lemon juice, and ⅓ cup ATP Mother Sauce. Transfer to an airtight container and refrigerate.
For the Pickled Jicama:
In a saucepan over medium-high heat, bring vinegar, sugar, pickling spice, garlic, bay leaves, and red pepper flakes to a boil. Remove from heat and let cool. Using a large circle cutter, punch out jicama slices into circles. Transfer to a nonreactive container and submerge in pickling liquid. Cover and refrigerate.
For the Everything Seasoning:
In a mixing bowl, combine all ingredients. Transfer to an airtight container and reserve.
To Assemble and Serve:
In a bowl, toss avocado with desired amount of Everything Seasoning. Set aside. Place 1 Pickled Jicama circle on a serving plate. Top with seasoned avocado followed by a drizzle of Mother Sauce Aïoli. Garnish with alfalfa sprouts.
