On Sunday mornings, the residents of the Kirkwood neighborhood of Atlanta wake up and take a stroll down the street, pretending to stretch their legs and smell the roses. But what they’re really looking to do is race down Hosea L. Williams Drive, hoping beyond hope that a forest green flag adorned with a pristinely smashed cheeseburger is flying above Evergreen Butcher + Baker. Attracting passersby and Evergreen’s faithful like a moth to a flame, this flag signifies the end of that week’s steer, and, most importantly, that it’s burger time. Made using ground beef from one single steer, Evergreen’s burger is only available on Sundays until the long line that forms outside has sold them out. Served on a naturally fermented and sesame-studded bun with house pickles and aïoli, the only thing that isn’t made by Emma and Sean Schacke at Evergreen is the American cheese. Pre-made and pre-packaged, the toasted bun provides a slightly sweet, eggy, and rich canvas for two patties that stay crispy, juicy, and full of beef flavor. “Sunday afternoons used to be really quiet,” says Sean. “This is such a good way to use up the rest of the cow that hasn’t been sold—we never have product left over now.”
