Grilled Suya Skewers

Marinated Hanger Steak, Suya Spice, Sliced Chiles

INGREDIENTS

Marinated Steak:
2 tablespoons peanut butter
1 tablespoon balsamic vinegar
1 teaspoon smoked paprika
1 teaspoon chopped garlic
1 teaspoon ground cumin
1 teaspoon kosher salt
3 pounds hanger steak, cut into 2-inch cubes

Suya Spice:
3 cups roasted peanuts 
1 tablespoon cornstarch
1 tablespoon onion powder
1 teaspoon smoked paprika
1 teaspoon ground cumin
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 bay leaf
1 teaspoon ground cayenne
1 dried habanero chile

To Assemble and Serve:
Yield: 1 serving
Peanut oil
Kosher salt
Thinly sliced chiles

METHOD

For the Marinated Steak:
In a mixing bowl, combine peanut butter, vinegar, and seasonings. Add cubed steak and toss to evenly coat. Transfer to an airtight container and refrigerate overnight.

For the Suya Spice:
In a food processor, pulse to combine all ingredients until a fine powder is achieved. Transfer to an airtight container and reserve.

To Assemble and Serve:
Prepare and heat  a grill. Skewer 4 pieces Marinated Steak on a wet wooden skewer. Repeat twice. Brush Marinated Steak with peanut oil. Place skewers on grill and sear on all sides. Reduce heat and cook until desired doneness. Remove from heat and season with Suya Spice. Return skewers to grill and cook additional 1 minute. Season with additional Suya Spice. Transfer to a serving plate. Season with salt. Garnish with chile.
