Marinated Beef Rib
Greek Yogurt and Tandoori Spice

INGREDIENTS
Tandoori Spice:
60 grams ginger powder
80 grams ground cumin
60 grams paprika
60 grams turmeric
40 grams cayenne
120 grams Korean chile flakes
80 grams ground black pepper
Marinated Beef:
550 grams Greek yogurt
1 rack beef rib
METHOD
For the Tandoori Spice:
In a bowl, combine all ingredients.
For the Beef Rib Marinade:
In a bowl, whisk to combine Tandoori Spice and yogurt. In nonreactive container, rub marinade on rib. Refrigerate 24 hours.
To Assemble and Serve:
Heat oven to 300°F. In a roasting pan lined with a wire rack, roast rib 1½ hours, until fork tender. Increase heat to 450°F and roast 10 minutes more, until nicely browned.
