INGREDIENTS
Miso-Apple Shrub:
450 grams Macoun apples, washed, cored, and chopped
450 grams sugar
450 grams apple cider vinegar
60 grams red miso paste
To Assemble and Serve:
Yield: 1 cocktail
1½ ounces Industrious Spirit Company Ostreida oyster vodka
4 ounces soda water
1 rosemary sprig
METHOD
For the Miso-Apple Shrub:
In a food processor, pulse apples and sugar until combined. Transfer to a nonreactive container and refrigerate 24 hours. The next day, transfer mixture to a Vitamix blender with vinegar and miso. Blend until sugar is fully dissolved. Strain, bottle, and refrigerate.
To Assemble and Serve:
In a chilled highball glass with ice, add vodka and ¾ ounce Miso-Apple Shrub. Top with soda water. Pull twice with a barspoon to incorporate. Garnish with rosemary sprig.
