Strawberry-Guava Pop Tart

Freeze Dried Strawberry, Cream Cheese Frosting, and Sprinkles

INGREDIENTS:

Pop Tart Dough:
250 grams all purpose flour
1 teaspoon sugar
1 teaspoon salt
170 grams cold butter
10 grams lemon juice
60 grams ice water

 Strawberry Guava Filling:
250 grams guava paste
150 grams strawberries
50 grams sugar
¼ teaspoon lemon juice
Pinch of salt

Cream Cheese Frosting:
200 grams Smithfield pourable cream cheese
50 grams powdered sugar
½ teaspoon lemon juice

Assembly:
Sprinkles, to decorate
Freeze dried strawberries, to decorate

METHOD:

For the Pop Tart Dough:
Cut butter into small chunks and set aside in the fridge. Whisk together all dry ingredients. Whisk together lemon juice and water. Using a robot coupe or in a bowl using a pastry cutter, cut the butter into the dry ingredients until the butter is in pea sized chunks. Slowly pour in liquid and pulse until the dough just starts to come together. Finish kneading lightly by hand and wrap with plastic. Leave dough to rest in the fridge for 1 hour.

For the Strawberry Guava Filling:
Combine the strawberries, sugar, and guava paste in a sauce pot and cook on med-low heat until strawberries release liquid and start to break down, and guava paste is soft. Use an immersion blender to blend the filling together until smooth. Cook until it thickens, about 10 minutes. Cool completely.

For the Cream Cheese Frosting:
Whisk all ingredients together until smooth.

To Assemble and Serve:
Roll dough out to a 15x15” square. The dough should be about ⅛” thick. Trim the edges so it is an even square, and cut 5x7.5” rectangles. Spread the filling on the right side of each rectangle, leaving a ¼” border on the edges. Fold the left side of the dough over the filling and press the edges together. Use a fork to seal all edges. Use the fork to poke holes in the top side of the pop tart to let steam escape while baking. Place on a parchment lined tray and bake at 375 F for 30-40 minutes, until the dough is golden brown and the filling is bubbling. Cool completely. When cooled, put the cream cheese frosting in a shallow bowl or plate, and dip each pop tart in the frosting until you have an even thick layer. Decorate with sprinkles, freeze dried strawberries, or whatever else you want and enjoy!
