“The original inspiration for this drink was Cappelletti and watermelon. My secret for the watermelon is to float it. When you shake watermelon juice, it dilutes the flavor, and you don’t taste it. I added chile salt for that fajita affect.”

INGREDIENTS

4 leaves Thai basil
1¼ ounces Bruxo mezcal
¾ ounce Speed Craft grapefruit cream soda syrup
½ ounce Cappelletti Aperitivo Americano
½ ounce Cocchi Rosa
¼ ounce lime juice
2 dashes Pernod absinthe
1 ounce club soda
1 ounce watermelon juice
1 thin slice watermelon
Chile salt

METHOD

In a shaker, muddle basil. Add add mezcal, soda syrup, Cappelletti, Cocchi, lime, absinthe, and ice. Shake and strain into a Collins glass filled with ice. Top with club soda and then a float of watermelon juice. Dip half the watermelon slice in chile salt and slide salted watermelon into the glass.
