Tofu Sisig
Fried Tofu, Sisig Sauce, Bell Peppers, Scallion, White Rice

INGREDIENTS
Sisig Sauce:
1 cup mayonnaise
2 tablespoons calamansi juice
3 teaspoons ground black pepper
4 cups soy sauce
To Assemble and Serve:
Yield: 1 serving
Cooked white rice
Oil for frying
1 cup cubed tofu
Neutral oil
¼ cup diced scallion
¼ cup diced bell peppers
METHOD
For the Sisig Sauce:
In a mixing bowl, combine all ingredients. Transfer to an airtight container and refrigerate.
To Assemble and Serve:
Place rice in a serving bowl and set aside. In a fryer, heat oil to 350°F. Add tofu and fry until golden brown. Set aside. In a sautépan over medium flame, heat oil. Add scallion and peppers and sauté until soft. Add fried tofu and desired amount Sisig Sauce. Toss to coat. Pour mixture over rice and serve.
