Blended Mushroom-Beef Burger
Harissa Aïoli, Broccoli Slaw, Ketchup, Red Onion, Cheddar Cheese, Hawaiian Bun

INGREDIENTS
Mushroom Blend
1½ pounds Cremini mushrooms
8 ounces French horned mushrooms
1½ tablespoons ground cordiander
1½ tablespoons ground fenugreek
1½ teaspoons Ground black pepper
¼ cup confit garlic
½ tablespoon salt
1 bunch cilantro, finely chopped
Harissa Aïoli
2 egg yolks
1 tablespoon harissa
¼ teaspoon Tabasco
Juice of 1 lemon
1½ cups blended oil
Salt
Broccoli Slaw
1 to 2 heads broccoli, shredded
2 carrots, shredded
1 quarter head purple cabbage, shredded
Zest and juice of 1 lemon
Salt
To Assemble and Serve
Blended oil
14 ounces 90/10 ground beef
Salt
Black pepper
7 slices sharp cheddar cheese
7 Hawaiian buns, split
Ketchup
7 thin slices red onion
METHOD
For the Mushroom Blend:
Heat oven to 400°F. To a food processor fi tted with a grater, grate mushrooms. Transfer mixture to a bowl and toss with the coriander, fenugreek, black pepper, garlic, and salt. Spread the mushroom mixture onto a parchment-lined sheet tray. Roast 8 minutes; cool slightly. To the food processor fitted with a blade, add mushroom mixture and cilantro; pulse to combine. Cool completely.
For the Harissa Aïoli:
In food processor, combine yolks, Dijon, harissa, Tabasco, and lemon. While processing, stream in oil to emulsify. Season with salt, cover, and refrigerate.
For the Broccoli Slaw:
In a large bowl, combine vegetables, lemon, and ¼ cup Harissa Aïoli. Season with salt, cover, and refrigerate at least 20 minutes.
To Assemble and Serve:
In a cast iron pan over high flame, heat a slick of oil. Form 4-ounce patties by combining equal parts ground beef and Mushroom Blend; season with salt and pepper. A few at a time, place patties in pan and sear on both sides, placing a slice of cheddar on top to melt and cooking to desired doneness. On the top half of buns, spread a smear of ketchup and add Broccoli Slaw to the bottom half of the bun. Place the patty on top, along with red onion, and top bun.
