Pink Pineapple and Star Fruit

INGREDIENTS
Passion Fruit Dressing:
4 whole passion fruit
One 2-inch piece ginger
6 sprigs thyme
Salt
Sugar
2 cups lemongrass oil
Ash Oil:
Fruit peels
Neutral oil
To Assemble and Serve:
Diced pink pineapple
Salt
Diced star fruit
Ají amarillo powder
Thai basil
METHOD
For the Passion Fruit Dressing:
In a Vitamix blender, combine passion fruit, ginger, thyme, and desired amount of salt and sugar. While blending, slowly stream in lemongrass oil until mixture is smooth and fully emulsified. Taste and adjust seasoning with salt and sugar.
For the Ash Oil:
Over a grill or by using a blowtorch, scorch desired fruit peels until they become an ash. Transfer ashes to a Vitamix blender. With the blender running on low speed, stream in oil until mixture is smooth and fully emulsified.
To Assemble and Serve:
In a bowl, season pineapple with salt. Toss to coat and set aside. In a serving bowl, pour Passion Fruit Dressing letting it pool in the bowl. Arrange seasoned pineapple in a half moon shape in the bowel. Top with star fruit followed by a few drops Ash Oil. Garnish fruit with ají amarillo powder and fresh basil.
