Portuguese Gin & Tonic

London Dry Gin, White Port, Lime Cordial, Tonic Water

INGREDIENTS

Lime Cordial:
12 limes
½ cup sugar

To Assemble and Serve:
Yield: 1 cocktail
1 ounce white port
1 ounce Broker’s London dry gin
Fever Tree Indian tonic water
Dehydrated lime wheel
Dehydrated juniper berries

METHOD

For the Lime Cordial:
Juice limes, reserving peels. Cover and refrigerate juice. In an airtight container, combine peels and sugar; seal. Let mixture sit at room temperature for 2 days. Strain liquid through a chinois; discard solids. Scale liquid and record volume. In a nonreactive container with a lid, combine liquid with an equal volume of lime juice. Shake vigorously. 

To Assemble and Serve:
To a wine glass filled with ice, add Port, gin, and ½ ounce Lime Cordial. Top with tonic by pouring down a bar spoon stem. Garnish with lime wheel and juniper berries
