QQ Sweet Potato Balls
Brown Sugar Syrup, Crushed Peanuts, and Olive Oil

INGREDIENTS:
8 ounces peeled, chopped, steamed sweet potato
4 ounces sweet potato starch, plus additional for dusting
2 tablespoons brown sugar syrup
2 tablespoons crushed peanuts
1 tablespoon olive oil
METHOD:
In a bowl, combine potato and starch. Using hands, mash together, adding more starch as necessary, until dough comes together. Transfer to a surface dusted with starch. Roll dough out into a log, about ¾ inch in diameter. Cut log into 1-inch lengths. If not cooking immediately, transfer to a wax paper-lined sheet tray and freeze. Using a Vulcan Versatile Chef Station, boil water and drop in QQ Balls. Boil 3 minutes, until balls are cooked through and bright orange; drain. In a serving bowl, place QQ Balls and finish with syrup, peanuts, and oil.KTK
