Seaside Ambrosia

Melon Cream Liqueur, Mastic Tears Liqueur, Lime, Mint

INGREDIENTS:

Melon Cream Liqueur:
Yield: Six 750-milliliter bottles
3 Ambrosia melons, seeded, peeled, then chopped into 1-inch
pieces
4 to 4 ½ bottles vodka
2 cups full-fat coconut milk

 To Assemble and Serve:
Yield: 1 cocktail
¾ ounce Mastic Tears dry liqueur
¾ ounce lime juice
¾ ounce simple syrup
1 sprig mint

METHOD:

For the Melon Cream Liqueur:
In a large, nonreactive container. Combine melons with enough vodka to cover. Let infuse 3 days to 1 week, stirring and adding more vodka to cover melons daily. Strain vodka through a chinois and set aside. Place the soaked melon in a Vitamix blender. Purée until smooth. Strain through a fine mesh strainer into a large mixing bowl. Add coconut milk and whisk to combine. Slowly whisk in the melon-infused vodka. Distribute to glass containers. Refrigerate. 

To Assemble and Serve:
In a cocktail shaker, combine Mastic Tears, lime, simple syrup, and 1 ½ ounces Melon Cream Liqueur. Add ice. Shake to combine. Strain into a snifter glass filled with crushed ice. Garnish with mint.
