Spiced Black Eyed Peas, Onion, Tomato, Toasted Bread

INGREDIENTS
1 cup avocado oil
1 large onion, julienned
1 tomato, diced
2 cups cooked black eyed peas
Salt
Ground black pepper
Desired seasonings (we use our Akadi house seasoning)
Toasted French bread
METHOD
In a sauté pan over medium-low flame, heat oil. Add onion and cook 15 minutes, or until onions are golden brown and translucent. Add tomatoes and cook additional 5 minutes. Stir in black eyed peas. Season with salt, pepper, and seasonings. If the pan is too dry, add ¼ cup water. Reduce heat and cook additional 10 minutes, or until the mixture thickens. Spoon into a serving bowl and serve with toasted bread.
