INGREDIENTS
Squirt Cordial:
156 grams grapefruit peel
3.9 kilograms clarified grapefruit juice
3.9 kilograms granulated sugar
196 grams citric acid
98 grams malic acid
16 grams kosher salt
Grapefruit Spray:
10 grams Grapefruit essential oil
90 grams 200-proof ethanol
Pulque Paint:
700 grams pulque
12 grams titanium dioxide
70 grams kosher salt
38 grams Ultra-Tex 8
To Assemble and Serve:
2 liters Cascahuín 48 tequila
1 liter pulque
1 liter Nami Junmai Ginjo sake
500 milliliters Granada Vallet liqueur
METHOD
For the Squirt Cordial:
Heat the water bath of an immersion circulator to 135°F. Place citrus peels in a vacuum bag and set aside. In a Vitamix blender, add remaining and blend on high speed 90 seconds, or until well combined. Transfer to the vacuum bag with the peels. Seal and cook sous vide 2 hours. Strain, bottle, and reserve.
For the Grapefruit Spray:
In a nonreactive container, combine grapefruit oil and ethanol. Transfer to a small spray bottle and reserve.
For the Pulque Paint:
In a mixing bowl, combine pulque, titanium dioxide, and salt. Using an immersion blender, blend mixture until smooth. Add Ultra-Tex 8 and blend again until well combined. Transfer to an airtight container. Cover and refrigerate.
To Assemble and Serve:
In a 20-liter, nonreactive container, add all ingredients, 2 liters Squirt Cordial, and 9 liters water. Stir to combine. Cover and refrigerate until mixture reaches 20°F. Fill a soda bottle halfway with mixture. Attach a carbon dioxide tank set to 45 PSI. Shake until carbon dioxide is absorbed. Let sit 20 minutes. Open container to release bubbles. Repeat process two additional times. Let sit overnight. The next day, rim half a Collins glass with Pulque Paint. Spray with Grapefruit Spray. Pour 8 ounces batched cocktail into prepared glass with an ice spear.
