Watermelon-Dragon Fruit Salad

Blackberries, Texas Honey, Watercress, Mint, Lemon, and Olive Oil

INGREDIENTS:

Lemon Texas Honey Dressing:
¼ cup freshly squeezed lemon juice
1 tablespoon Texas honey
½ teaspoon mustard
Salt
¼ cup olive oil

To Assemble and Serve:
1 mini seedless watermelon, cut into 1-inch pieces
2 dragon fruits, halved and scooped with a melon baller
1 cup blackberries
2 cups watercress
¼ cup roughly chopped mint leaves

METHOD:

For the Lemon Texas Honey Dressing:
In a small bowl, whisk all ingredients together vigorously. Adjust seasoning if needed. For a creamier consistency, use a hand blender to emulsify the ingredients.

To Assemble and Serve:
In a large bowl, toss all ingredients together and drizzle with ½ cup Lemon Texas Honey Dressing.
